This is a blend of 70% Chardonnay and 30% Pinot Noir. Cap Classique is the regulated South African designation for sparkling wine made by the traditional method.
Farming
The grapes are sourced entirely from vineyards in the Stellenbosch region of South Africa. The vineyards benefit from cool maritime breezes and decomposed granite soils. The farming is sustainable.
Winemaking
This wine is made using the Méthode Cap Classique or Traditional Method, with the secondary fermentation taking place in the bottle. The base wine is whole-bunch pressed and fermented, then aged for eight months in concrete tanks before the secondary fermentation. The wine is aged on the lees in the bottle for an extended period, often 36 months. The total Residual Sugar is reported as 6 g/L, which places it within the Brut classification. The typical alcohol content is 12% ABV.
Tasting Notes
The wine is dry, smooth, and has a fine, persistent mousse. Aromas and flavors include golden apple, pear, lemon zest, honeysuckle, and citrus peel. Extended lees aging contributes secondary notes of toasted brioche, almond, and pistachio. The finish is clean, mineral-driven, and crisp, with balanced acidity.
