The winemaking team utilizes a blend of Chardonnay, Pinot Noir, and Pinot Meunier sourced from 42 different villages across the Champagne region. The wine is fermented in temperature-controlled stainless steel vats to preserve the primary fruit and high-toned aromatics. This cuvée is aged on its lees for a minimum of 36 months to develop aromatic complexity and a refined texture. As a Brut Nature, the wine is bottled with zero dosage, ensuring the final profile is a pure and transparent expression of the diverse terroir and the structural energy of the grapes.
The fruit is grown across the major sub-regions of Champagne, including the Montagne de Reims, Côte des Blancs, and Vallée de la Marne. The sites are defined by their iconic Kimmeridgian and Portlandian chalk soils, which provide excellent drainage and impart a signature mineral backbone to the wine. Produced at the Avize Viti Campus, this wine represents a unique collaborative effort between students and cellar masters, drawing from a wide range of vineyard sites to create a balanced, panoramic representation of the entire region.
