This wine is a field blend typically composed of 47% Spoletino, 33% Grechetto, 16% Malvasia di Candia, and 4% Moscato. It is a white frizzante lightly sparkling wine from Umbria, Italy.
Farming
The estate is certified Organic. The grapes are grown in vineyards with clay and calcareous soil.
Winemaking
This wine is made using the Ancestral Method also known as rifermentato in bottiglia. The base wine undergoes temperature-controlled fermentation in stainless steel tanks. The wine is bottled before the first fermentation is complete or by adding fresh must and yeasts to trigger a second fermentation in the bottle. It is left Sui Lieviti on the fine lees and is not disgorged or filtered before release, which results in a naturally hazy appearance.
Tasting Notes
The wine is dry, hazy, and possesses a light mousse. The palate is smooth and features comfortable acidity. Fragrant aromas of yellow fruit are present, especially apple and apricot. Additional flavors include lemon and peach. The finish offers distinct notes of orange blossom.
