Grapes
This Champagne is a traditional blend primarily composed of 60% Pinot Meunier, 20% Chardonnay, and 20% Pinot Noir. All grapes are sourced exclusively from the family's own Premier Cru vineyards in the Montagne de Reims region, specifically the village of Chigny-les-Roses. The average vine age is approximately 50 years.
Farming
J. Lassalle is a grower-producer that farms its own estate vineyards. The soils are composed of clay and limestone.
Winemaking
The wine is made using the Méthode Champenoise or Traditional Method. The grapes are crushed on a traditional wooden basket press. The base wine undergoes both alcoholic and malolactic fermentation. The blend contains reserve wines from previous vintages. The wine rests sur lie on the lees for an extensive period of 48 months before disgorgement. The final dosage is 8 g/L, consistent with the Brut classification. Every bottle is riddled by hand.
Tasting Notes
This Champagne is described as round, ample, and lively with a fine, subtle mousse. Aromas and flavors include a range of fruit: fresh pear, apple, white peach, and bright citrus. The long lees aging contributes complex notes of brioche, toasted bread, marzipan, and nuts. It maintains a fresh, nervy finish with good underlying acidity and a persistent chalky minerality.
