Aromas of toasted brioche, lemon confit, candied citrus, and blossom honey lead into a rich, energetic palate. Flavors of tart yellow apple, dried herbs, and flinty minerality mesh with a light, oxidative undertone. The texture is creamy and layered, supported by a fine-grained, pulsing mousse, driving natural acidity, and a long, savory, saline finish.
Made from 100% Chardonnay vinified using the traditional method (Metodo Classico). Base wines spontaneously ferment in neutral oak barriques using native yeasts before joining a perpetual solera system. The wine undergoes secondary fermentation in the bottle and ages sur lie for a minimum of 45 months. It is disgorged with zero added dosage, unfined, unfiltered, and made with minimal sulfur additions.
Grapes are grown on small, organically farmed estate plots in Gussago, a high-elevation commune situated in the far eastern edge of Franciacorta in Lombardy. The 18-year-old vines grow in limestone and clay-rich soils. Cool airflow off the nearby pre-Alps maintains low temperatures, allowing the Chardonnay to develop slow, complete flavor maturity while keeping high natural acidity and sharp mineral character.
