Aromas of wild strawberry, tart red cherry, rose petal, and subtle orange peel lead into a lithe, pale-hued palate. Delicate flavors of cranberry and red currant mesh with notes of white pepper, dried herbs, and a distinctive earthy, crushed-stone minerality. The texture is pale and translucent in appearance yet delivers a surprising fine-grained tannic grip, balanced by a high, mouthwatering natural acidity and a clean, savory finish.
Hand-harvested 100% Ploussard is whole-cluster pressed and undergoes spontaneous fermentation with native yeasts in neutral oak foudres. Extraction is kept minimal to protect the delicate, thin-skinned variety. The wine ages in old, neutral oak casks for roughly one year before bottling without fining or filtration, and with minimal to no added sulfur.
Grapes are grown on certified organic estate plots in the commune of Pupillin within the Arbois-Pupillin appellation of the Jura. The vines sit on steep, hillside sites characterized by stony, limestone-heavy clay and grey marl soils. Pupillin's cool sub-alpine microclimate and high elevation preserve the grape's pale extraction, bright acidity, and wild aromatic character.
