Winemaker François Crochet utilizes 100% Pinot Noir harvested from vines averaging 20 years of age. The fruit is hand-picked and whole-cluster pressed to ensure a pale color and delicate extraction. Fermentation occurs with natural yeasts in stainless steel tanks at cool temperatures to preserve the primary fruit aromatics. The wine ages on its fine lees in steel for six months before being bottled unfined and lightly filtered to maintain its clarity and tension.
The fruit is grown in the village of Bué within the Sancerre AOC of the Loire Valley. The site is defined by a blend of terres blanches (clay and limestone) and caillottes (stony limestone) soils. These high-calcium terroirs, coupled with Crochet’s early-picking philosophy, result in a rosé with significant structural lift and mineral focus. The estate is certified organic and follows biodynamic principles, focusing on small-batch production from precisely managed parcels.
