Aromas of white peach, lemongrass, and lime zest lead into a lively, medium-bodied palate. Crisp flavors of green apple and grapefruit mesh with notes of honeysuckle and crushed limestone. The texture is lightly rounded on the mid-palate, anchored by a bright, refreshing acidity and a clean, mineral-driven finish.
Hand-harvested Sémillon and Sauvignon Blanc undergo a brief cold maceration on the skins to enhance aromatic intensity and body. The grapes are gently pressed, and the juice ferments in temperature-controlled stainless steel tanks using native yeasts. The wine ages on its fine lees in stainless steel for six months with periodic stirring to build texture while preserving pure, crisp fruit.
Grapes are grown on the estate's historic, south-facing hillside vineyards in Sainte-Croix-du-Mont, overlooking the Garonne River. The old vines are rooted in deep clay and limestone soils layered over ancient fossilized oyster beds. This unique, calcium-rich terrain gives the fruit its concentrated depth, structural precision, and signature flinty minerality.
