Mike Roth and Craig Winchester practice sustainable farming and hand-harvesting for this low-intervention wine. In the cellar, the grapes are sent directly to the press and fermented using only native yeasts. The juice ages for six months in a combination of neutral French oak and stainless steel barrels with nothing added except a minimal amount of sulfur before bottling.
The fruit is a blend from two sites in Santa Barbara County: Honeybear Orchard and the iconic Jurassic Park Vineyard in Los Olivos. Jurassic Park is famous for its own-rooted vines planted in 1982 in Arnold Sand soils, which consist of well-drained sand over soft sandstone. These sandy, fossil-rich soils contribute a specific saline quality and structural tension to the Chenin Blanc.
