The winemaking team utilizes 100% Chardonnay, which is hand-harvested and kept in a refrigerated cell overnight to preserve aromatics. The grapes undergo a gentle pressing and are fermented in temperature-controlled stainless steel vats. The wine matures on its fine lees for two months in steel, followed by two additional months of bottle aging before release. This unoaked process emphasizes the natural acidity and primary fruit expression of the metamorphic soil.
The fruit is grown on the Il Borro Estate in the Valdarno di Sopra region of Tuscany. The site is defined by its unique metamorphic soil, which is rich in seashell fossils from an ancient lake bed that once covered the area. This terroir, combined with the estate’s organic and biodynamic farming practices, provides the Chardonnay with a signature mineral tension and high-toned structure that distinguishes it from the broader Tuscan climate.
