Winemaking
Hand-harvested fruit is partially whole-bunch fermented with native yeasts. The wine is aged in old French oak barrels before bottling without fining or filtration.
Tasting Notes
Deep ruby color with aromas of black cherry, plum, and wild herbs. The palate is fresh and vibrant, showing red and black fruit, savory spice, and fine tannins with a lifted, mineral finish.
