Grapes are harvested at high acidity and relatively low sugar, then fermented spontaneously with native yeasts in a concrete egg. Fermentation is allowed to proceed slowly and cool, completing naturally without intervention. The wine is bottled with minimal sulfur and no additives, preserving a raw and transparent expression of the fruit.
The vineyard sits high in the Siskiyou Mountains of Oregon's Applegate Valley, a remote and rugged AVA in Southern Oregon near the California border. The estate is farmed to Demeter Biodynamic and Regenerative Organic Gold Certified standards, with soils and a continental mountain climate that bear far more resemblance to the Southern Rhône than to the Willamette Valley. Roussanne thrives here in a way that has surprised even the wine world, producing a version of the variety with both the richness of the south and the precision of a cooler-climate site.
