Aromas of dark cherry, cassis, and black currant combine with hints of cedar and warm baking spices. The palate is medium-bodied and velvety, showing forward fruit flavors of red plum and raspberry torte alongside a touch of savory dried herbs. Polished, soft tannins provide a smooth structure, leading into a clean finish accented by notes of dark chocolate and vanilla bean.
The blend consists of 94% Cabernet Sauvignon and 6% Merlot. Grapes are fully destemmed and gently crushed into closed-top stainless steel tanks for fermentation at warm temperatures, keeping the extraction focused on primary fruit flavors and soft tannins. Following fermentation, the wine ages in a combination of French and American oak barrels to round out the mid-palate and integrate the wood spice.
Fruit is sourced entirely from the Paso Robles AVA within California's Central Coast. The vineyards are characterized by calcareous soils and alluvial loam, which help regulate vine growth. The region experiences a dramatic diurnal temperature shift, featuring hot, sun-drenched days that fully mature the fruit flavors, paired with sharp overnight cooling that helps the grapes maintain vital structural balance.
