100% Malvasía Volcánica. This is a Traditional Method sparkling wine from the Canary Islands (Lanzarote, Spain). Malvasía Volcánica is an indigenous grape variety that is a crossing of Malvasía Aromatica and the local Marmajuelo.
Farming
The vineyards are situated on the volcanic island of Lanzarote. The vines are planted in pits dug into the black volcanic ash (picon) layer, a technique that protects them from the intense winds and conserves precious rainwater. The viticulture is low-intervention/organic (uncertified) due to the extreme, disease-free conditions.
Winemaking
The sparkling wine is produced using the Méthode Champenoise (Traditional Method). The base wine is aged for some time before the second fermentation in the bottle. It is then aged on the lees (sur lie) for approximately 18 to 20 months before disgorgement. The wine is classified as Brut Nature, meaning it has no added dosage (0 g/L residual sugar).
Tasting Notes
Known for its electric, mineral-driven profile reflecting the volcanic terroir. Aromas combine fresh citrus (limes, lemon), white blossoms, apple, and pear with savory notes of flint, wet stone, fennel, and sea spray/salinity. The palate is bone dry, defined by a vibrant, crystalline acidity, a fine and persistent bubble stream, and a long, refreshing finish often featuring subtle hints of pastry or biscuit from the lees aging.
