Hand-picked fruit undergoes a traditional two-week fermentation in temperature-controlled vats, with a focus on gentle extraction to keep the tannins soft and accessible. Following the press, the wine shifts to stainless steel tanks for maturation. Aging completely in steel preserves the vibrant primary fruit characteristics, while a complete malolactic fermentation softens the natural acidity before bottling.
Grapes are sourced from southern Burgundy, predominantly out of the rolling hills of the Mâconnais region. Vines are planted on south and southeast-facing slopes featuring a mix of clay, marl, and small deposits of granite. The region's semi-continental climate ensures plenty of daytime sun to ripen the Gamay grapes fully, while cooler evening temperatures lock in the bright, refreshing fruit profile.
