Aromas of wild red berries, white pepper, and dried hibiscus lead into a light, energetic palate. Bright flavors of sour cherry and pomegranate mesh with notes of volcanic ash, smoky flint, and wild herbs. The wine is incredibly fresh and high-toned, with fine, chalky tannins and a long, intensely savory finish.
Crafted primarily from Listán Prieto, with a small addition of Tintilla. The old vines are hand-harvested, and each vineyard plot is fermented separately with indigenous yeasts in plastic tubs and concrete vats. A portion of the fruit undergoes whole-cluster maceration to enhance aromatic lift, and the wine is aged for eight months in old neutral oak barrels without racking or sulfur additions until bottling.
Grapes are sourced from old, ungrafted, bush-trained vines grown on the volcanic slopes of Santiago del Teide on the island of Tenerife. The vineyards sit at extreme elevations between 3,000 and 3,300 feet, well above the moisture-heavy trade winds. The high-altitude sun ripens the fruit completely, while the dramatic nightly temperature drops and iron-rich volcanic soils give the wine its distinct mineral tension.
