Hand-harvested, organically farmed Melon de Bourgogne ferments spontaneously using native yeasts in concrete tanks. In 2023, the wine undergoes full malolactic fermentation. It ages for eight months on its fine lees in concrete tanks to build texture before bottling without fining or filtration.
Grapes come from estate vineyards situated where the Sèvre and Maine rivers meet in Saint-Fiacre-sur-Maine. Growing in a mix of orthogneiss, gneiss, and schist soils, the vines benefit from cool maritime air currents that moderate temperatures and preserve high natural acidity.
