Aromas of wild cherry, peach skin, black pepper, and dried Mediterranean herbs lead into a medium-bodied, savory palate. Flavors of dark plum, tart raspberry, baking spices, and crushed stone join lively natural acidity and fine, rustic tannins through a long, dry, peppery finish.
Hand-harvested fruit undergoes traditional foot-crushing (pigeage) with 100 percent whole clusters retained. Fermentation occurs with indigenous yeasts in open-top stainless steel tanks with extended skin contact. The wine ages for one year in neutral French oak barrels to build structure without adding oak flavor before being bottled unfined and unfiltered.
Grapes are sourced from old-vine, dry-farmed vineyard sites across California, including Carignan from Lodi and Cinsault from King City in the Central Coast. Growing in well-drained, sandy loam and gravelly soils, the vines experience warm daytime heat mitigated by coastal breezes and night-time cooling, yielding balanced fruit with bright natural acidity.
