Aromas of wild raspberry, redcurrant, and rose petals integrate with savory notes of graham cracker and a hint of white pepper. The palate is light-bodied and exceptionally crisp, featuring a core of bright red berries and a fine, persistent mousse. It displays a clean acidity and a silky texture that leads to a dry, balanced finish marked by a refreshing mineral snap and a touch of citrus zest.
The winemaking team utilizes an estate-grown blend of Pinot Noir and Parellada. In the cellar, the wine is produced using the Méthode Traditionnelle, with the secondary fermentation occurring in the bottle. The Pinot Noir undergoes a brief cold maceration to achieve its delicate salmon color before being pressed. The wine ages on its lees for at least 12 months before disgorgement, a process that develops a sophisticated creamy texture while preserving the primary fruit’s vibrant energy.
The fruit is grown on the Naveran Estate in the Alt Penedès sub-region of Spain. The site is defined by its high elevation and limestone-rich soils, which provide excellent drainage and impart a distinct structural tension. The estate utilizes organic farming practices, benefiting from a Mediterranean climate that is tempered by the cooling influence of the nearby mountains. This specific terroir allows for slow ripening, ensuring the grapes maintain the high-toned acidity necessary for premium sparkling wine production.
