Farmed organically and hand-harvested from mature vines averaging 50 years of age. A blend of 60 percent Nebbiolo with 40 percent rare local red varieties including Neyret, Ner d'Ala, and Vernassa. The grapes are destemmed and undergo spontaneous alcoholic fermentation with native yeasts in stainless steel tanks, followed by roughly six weeks of skin contact. The wine ages in neutral oak tonneaux, used barriques, and glass demijohns where it undergoes spontaneous malolactic fermentation before bottling without filtration.
Grapes are grown in Carema, a historic mountain village located in the far northern reaches of Piedmont, Italy. The vines sit on dramatic, steep terraces supported by centuries-old dry stone walls between 300 and 600 meters above sea level. Planted on sandy, loamy glacial moraine soils, the vines are trained using the traditional Caremese pergola system. The high Alpine altitude and cool mountain currents protect natural freshness while allowing steady, extended ripening.
