Farming
Sourced from vineyards in South Australia’s McLaren Vale region. The fruit is grown under sustainable practices with an emphasis on soil health and low yields to ensure concentration and intensity.
Winemaking
Fermented in stainless steel and finished using the Charmat method to preserve freshness and fruit purity. The wine is dosed to a slightly sweet level (approximately 70 g/L residual sugar) to balance the variety’s natural tannin and acidity. Bottled under pressure to retain effervescence.
Tasting Notes
Deep crimson in color with a lively mousse. Aromas of blackberry, plum, and dark chocolate lead to a palate of ripe black fruit, mocha, and spice. The finish is rich yet balanced, with a creamy texture and persistent sparkle.
