Aromas of fresh lemon zest, green apple, acacia blossom, and warm brioche lead into a crisp, focused palate. Flavors of white peach, lemon curd, and subtle toasted almond mesh with a chalky mineral core. The texture is slender and creamy, supported by a fine mousse and vibrant, mouthwatering acidity through a bone-dry, saline finish.
Farmed organically and biodynamically. A blend of 50 percent Chardonnay, 25 percent Pinot Blanc, and 25 percent Auxerrois, hand-harvested with strict whole-cluster pressing. Alcoholic and malolactic fermentations take place in temperature-controlled stainless steel tanks. Crafted using the traditional method, the wine undergoes a second fermentation in bottle and ages on its fine lees for over 24 months before receiving a minimal dosage of 3 to 4 grams per liter.
Grapes are grown in the Hangenbreite lieu-dit near the village of Dahlenheim in northern Alsace. The steep, east-facing slope features clay and marly-limestone soils. The northern positioning and cool microclimate protect natural freshness and acidity, while the mineral-rich soils lend a distinct structural focus to the fruit.
