Farmed sustainably using high environmental value certified practices. Made from Mauzac grapes harvested by hand from vines averaging 15 to 20 years of age. Crafted using the méthode ancestrale, the juice begins fermentation in stainless steel tanks before being bottled in November with natural residual sugars remaining. Fermentation completes inside the bottle, trapping natural carbonation before the wine is disgorged in March.
Grapes are grown at the Domaine Rémi Larroque estate in Gaillac, located in Southwest France. The vines sit on clay and limestone soils on north-northeast facing slopes atop a hillside. The region benefits from a confluence of Mediterranean heat and cool Atlantic winds, promoting extended grape development while preserving crisp natural acidity.
