Aromas of fresh green apple, white peach, and jasmine integrate with notes of beeswax and warm pastry. The palate is light and airy, featuring a gentle, creamy mousse and a delicate sweetness that is perfectly balanced by a crisp, limestone-driven acidity.
Gilles and Geneviève Azam utilize certified organic and biodynamic farming for their high-altitude Mauzac vines. In the cellar, they follow the "méthode ancestrale" by bottling the wine before the primary fermentation is finished. This allows the natural sugars and native yeasts to complete fermentation inside the bottle, creating a light sparkle without the need for added sugar or sulfur.
The fruit is grown in the Roquetaillade village of the Limoux AOC, located at the foothills of the Pyrenees. At 450 meters of elevation, this is one of the coolest sites in the region. The vineyards feature stony clay and limestone soils, which contribute a specific flinty tension and precision to the Chenin Blanc and Mauzac grapes.
