The grapes undergo spontaneous whole-cluster fermentation using native yeasts in raw concrete vats. Aging takes place in neutral concrete and used oak barrels to preserve site identity, fruit clarity, and fresh aromatic complexity without heavy wood influence.
Grapes are sourced from high-elevation vineyards in Los Chacayes, a sub-region of the Uco Valley in Mendoza, Argentina. Situated at the foot of the Andes Mountains, the vineyard sits on stony, alluvial soils packed with gravel and chalky limestone. Intense sun exposure combined with cool mountain night air creates a dramatic diurnal shift, driving deep color and structure while preserving crisp natural freshness.
