Whole-bunch pressed and fermented with native yeasts in a combination of old oak barrels and stainless-steel tanks. The wine remains on lees for several months before bottling.
Tasting Notes
Light golden in color with aromas of lemon peel, chamomile, and hay. The palate is textured and balanced, showing flavors of citrus, pear, and subtle nuttiness with a long, mineral-driven finish.
