Grapes from old vines planted in 1956 and 1998 are spontaneously fermented with indigenous yeasts. The wine ages in oak casks for 12 months before being transferred to stainless steel vats for an additional nine months of maturation on its fine lees, integrating depth and texture without overloading the wine with heavy oak flavors.
