Aromas of cassis, black plum, dried thyme, garrigue, and smoky minerals lead into a concentrated, balanced palate. Flavors of dark cherry, tart redcurrant, licorice, and crushed black pepper mesh with a stony, savory core. The texture is silken and rounded, supported by smooth tannins and bright acidity that finish with a lingering peppery lift.
Farmed using organic and biodynamic practices. A blend of 45% Syrah, 40% Grenache Noir, and 15% Carignan, hand-harvested from old vines. The Syrah and Carignan undergo co-fermentation as whole berries with native yeasts, using gentle pump-overs for extraction. The wine ages for 10 months in concrete tanks without oak contact, preserving fruit clarity and mineral focus.
Grapes are grown in high-elevation estate plots near Fontjoncouse in the Hautes-Corbières region of the Languedoc. Situated around 1,000 feet above sea level, the vineyards feature complex Triassic clay-limestone soils rich in quartz and dolomitic limestone. Cool nights and persistent valley winds extend the ripening period, maintaining fresh acidity alongside deep fruit concentration.
