Farmed using certified organic practices. Hand-harvested Melon de Bourgogne grapes are whole-cluster pressed and fermented with wild yeasts in underground concrete tanks. The wine ages on its fine lees through the winter until spring bottling without oak contact, preserving the grape's natural tension and freshness.
Grapes are grown in estate plots in Maisdon-sur-Sèvre within the Loire Valley. The vineyards sit on varied granite bedrock—primarily granite of Clisson and sheared granite—covered by gravelly topsoils. These well-drained, mineral-rich soils give the fruit its signature saline driver, focused structure, and crisp focus.
