Gwénaëlle Croix and Rémi Branger utilize certified organic and biodynamic farming for these 60 to 90 year old vines. In the cellar, the hand-harvested grapes are pressed gently and fermented with native yeasts in underground glass-lined tanks. The wine matures on its fine lees for 24 months to develop its characteristic weight and complexity without the use of oak.
The fruit comes from the Clisson "cru communal" in the southern part of the Sèvre-et-Maine AOC. This specific site is defined by its granite bedrock, known as the Granite de Clisson, which is covered by a thin layer of gravel and clay. These well-drained, mineral-rich soils result in a wine with remarkable longevity and a dense, structural core.
