Aromas of black cherry, dark chocolate, fresh mint, and cracked peppercorn open to a palate that is juicy and accessible, with concentration balanced by a freshness that keeps everything lively. The finish is long and clean with genuine elegance.
Fermented using only native wild yeasts and aged exclusively in neutral French oak barriques, preserving the integrity of the fruit without adding oak character. The team harvested early for the vintage, prioritizing freshness and drinkability over extraction.
The fruit is drawn from two organically farmed vineyards in the Santa Ynez Valley. The first sits within the Happy Canyon AVA on gravelly loam studded with rocky galets. The second is in Los Olivos on a bench terrace of sandy loam over clay subsoil, planted to budwood from Château Cheval Blanc and farmed with biodynamic compost tea. The name "Roman Ceremony" is a celebration of the ancient origins of wine itself.
