It displays fine-grained, persistent tannins and a racy acidity that leads to a long finish marked by a distinct saline minerality and a persistent floral lift.
The Pasquero-Elia family utilizes 100% Nebbiolo from their historic estate. In the cellar, the fruit undergoes a traditional long fermentation in stainless steel tanks using native yeasts, followed by a lengthy maceration to build structural depth. The wine matures for eighteen months in large, neutral Slavonian oak barrels (botti). This patient, low-intervention approach is designed to preserve the crystalline fruit character and allow the natural power of the Serraboella site to soften into a harmonious, transparent expression of the grape.
The fruit is grown in the Serraboella MGA, one of the most famous and historic vineyard sites in the commune of Neive. The site is defined by its steep, south-facing ridge and unique "Sorì" exposure, which captures maximum sunlight. The soils are composed of ancient Tortonian marl and limestone, imparting a signature muscle and longevity to the wine. These high-altitude vineyards benefit from constant air movement, allowing the grapes to reach optimal maturity while retaining the bright, structural tension that defines the Barbaresco region.
