Aromas of white flowers, ripe apple, pastry, and subtle almond lead into a rich, structured palate. Flavors of white peach, raspberry, citrus peel, and toasted brioche mesh with a distinct chalky minerality. The texture is creamy and broad, supported by a fine mousse and vibrant natural acidity through a long, crisp finish.
Farmed organically across old vines. Hand-harvested grapes undergo fermentation in temperature-controlled stainless steel tanks with full malolactic fermentation. The wine ages on its lees for 36 months before disgorgement with a low dosage to preserve freshness and balance.
Grapes are grown in historic hillside plots across Mareuil-sur-Aÿ, Louvois, and Chouilly. Featuring steep slopes of chalk and limestone, these vineyard sites provide exceptional drainage and solar warmth, driving rich fruit concentration and persistent mineral drive in the wine.
