Siblings Camilla and Francesco Scavino utilize certified organic and biodynamic farming for their 100% Nebbiolo vines. In the cellar, the grapes undergo a pre-fermentation maceration followed by a traditional fermentation on the skins for approximately 15 days in stainless steel. The wine matures for 24 months in large 20-hectoliter Slavonian oak barrels, followed by an additional 12 months in the bottle before release. This traditional aging regimen focuses on integrating the tannins and developing aromatic complexity while preserving the primary energy of the fruit.
The fruit is primarily grown in the commune of Grinzane Cavour within the Barolo DOCG. The site is defined by its high-elevation vineyards, sitting at a minimum of 250 meters, with south and southeast exposures. The soils are a mix of calcareous clay, which contributes to the wine's deep color and opulent structure.
