The finish is long, structured, and deeply savory with persistent mineral notes.
Hand-harvested Nebbiolo undergoes a pre-fermentation maceration followed by approximately 15 days of fermentation on the skins in temperature-controlled tanks to gently extract structure and aromatics. The wine ages for 24 months in traditional Slavonian oak barrels and an additional 12 months in the bottle before release.
Grapes are organically grown in the Raviole single vineyard site near Grinzane Cavour within the Langhe. The vines are planted in a drainage-heavy mix of limestone and clay soil, which yields fruit with intense aromatic depth. This particular terrain, paired with the ideal diurnal temperature shifts of the region, gives the wine its focused, age-worthy structure.
