Certified organically grown on the Shallows bench, a flat rocky terrace of basalt boulders and thin soil.
Winemaking
Grapes were destemmed into open-top tanks and macro bins, cold soaked for four days, then fermented with regular punch-downs. After pressing, the wine was settled and aged for eleven months in French oak (40% new).
Tasting Notes
The 2021 vintage shows a deep core of red to stone fruit, plush texture, and more structure than prior versions, reflecting its foundation in the younger Dijon 777 block.
