Handpicked whole clusters are pressed directly to French oak barrels (25 percent new) for wild-yeast fermentation and complete malolactic conversion. The wine ages on lees for 10 months with occasional bâtonnage to build mid-palate texture and structural complexity before being bottled unfined and unfiltered with minimal sulfur additions.
Grapes are sourced from the Swaby Vineyard, an east-facing single-vineyard site planted in 1983 in the cool Piccadilly Valley within Australia's Adelaide Hills. Situated at 650 meters elevation, the site features sandstone soils intermixed with quartz. The extreme high-altitude diurnal shifts and cold mesoclimate preserve razor-sharp natural acidity while allowing for extended phenolic development.
