Aromas of dark plum, blackberry, crushed stone, and forest floor lead into a structured, full-bodied palate. Flavors of black raspberry and cherry mesh with notes of black pepper, dried tobacco, and subtle wild herbs. The texture is firm and earthy, anchored by dense tannins and a long, savory finish.
Grapes including Cabernet Franc, Mencía, Abouriou, and Brancellao are grown together in a single plot and harvested by hand. The fruit undergoes spontaneous whole-cluster fermentation using native yeasts in neutral vessels. The wine ages for three years in neutral oak barrels before bottling without fining, filtration, or added sulfur.
Grapes are sourced from the Hiyu Wine Farm estate in the Columbia Gorge appellation of Oregon. The single-block parcel features volcanic basalt and loam soils, farmed using uncertified biodynamic, permaculture, and regenerative methods. Livestock manage the understory vegetation without tilling or mowing, and no synthetic sprays or elemental sulfur are used in the vineyard. High elevations and strong winds maintain natural acidity and structural focus in the fruit.
