Grapes are hand‑harvested and destemmed before a slow, cool maceration and spontaneous fermentation with native yeasts, and the wine is aged for nine months in Burgundian barrels.
Produced by Domaine de Cazaban in the Cabardès appellation of Languedoc, in southern France. The vineyards sit on a mix of argilo‑calcaire and schist soils on the foothills of the Montagne Noire.
