Aromas of orange blossom, yellow apple, dried herbs, and ginger lead into a light to medium-bodied palate. Flavors of tart apricot, citrus peel, and white flowers mesh with a subtle honeycomb richness. The texture is gently grippy from skin contact, anchored by fresh natural acidity and a clean, saline-tinged mineral finish.
Grapes are farmed organically and harvested by hand. Whole clusters undergo roughly one month of skin-contact maceration in tank with no punch-downs, relying on natural native yeast fermentation with zero chemical additives or temperature manipulation. The wine is bottled unfined, unfiltered, and with no added sulfur.
A unique inter-regional blend made in France under the Vin de France designation. The wine combines 75% Jacquère sourced from high-elevation, mountain vineyards in Savoie with 25% Loin de l'Oeil from organically farmed sites in Southwest France.
