Aromas of creme de cassis, blueberry, sandalwood, and lead pencil lead into a dense, full-bodied palate. Concentrated flavors of dark plum and cherry sorbet blend with notes of chocolate, green tobacco, and subtle sage. The texture is plush and broad, anchored by fine-grained, chalky tannins and a long, mint-accented finish.
Hand-harvested Cabernet Sauvignon is blended with 2% Petit Verdot. The fruit ferments with strict temperature controls to extract structure while preserving fresh fruit character. Guided by winemaker Simon Faury and consulting winemaker Philippe Melka, the wine rests in French oak barrels (a high percentage new) for nearly two years before bottling.
Grapes are grown on the estate vineyard in the Happy Canyon of Santa Barbara AVA, situated at the easternmost edge of the Santa Ynez Valley. The vines grow in well-draining soils composed of loam, gravel, and high clay content. Happy Canyon is the warmest sub-appellation in Santa Barbara County, experiencing hot daytime sun balanced by steep 50-degree night-temperature drops from Pacific breezes, allowing Cabernet to achieve full maturity while preserving natural acidity.
