This single-vineyard Blanc de Blancs is produced by the husband-and-wife team Cécile and Vincent Bauchet. In the cellar, the Chardonnay undergoes fermentation in 75% stainless steel and 25% French oak barrels to introduce subtle weight. The wine is aged on its lees in the bottle for six years—well beyond the legal requirement—and finished with a low dosage of 2 grams per liter to emphasize the purity of the fruit and the specific vintage character.
The fruit is sourced exclusively from the Les Hauts d’Aillerands parcel, a prestigious lieu-dit in the Grand Cru village of Le Mesnil-sur-Oger within the Côte des Blancs. This vineyard is defined by its exceptionally thin topsoil over solid Belemnite chalk bedrock.
