Grapes
100% Hondarrabi Zuri. This is a Traditional Method sparkling wine from the Getariako Txakolina DO in the Basque Country of northern Spain. The grapes come from select, old-vine parcels.
Farming
The vines are 70+ years old, located 150-200 meters above the villages of Getaria and Zarautz. The winery practices organic farming. The soils are clay and calcareous.
Winemaking
The grapes are handpicked early to ensure high acidity. Primary fermentation with indigenous yeasts takes place in stainless steel tanks. The wine ages for one year in neutral 600L barrels before bottling. Secondary fermentation occurs in the bottle using the classic Méthode Champenoise. The wine is aged sur lie on the lees for six years before being hand-disgorged. It is bottled unfiltered with Zero Dosage, which is consistent with the Brut Nature designation.
Tasting Notes
A complex and elegant sparkling wine combining subtlety with freshness. The extensive lees aging imparts notes of cream, brioche, and beeswax. These are balanced by vibrant flavors of citrus (lemon, orange peel), yellow apple, pear, and white flowers. A distinct, savory note of sea spray and salinity runs through the palate and finish, reflecting its coastal origin. The bubbles are fine and persistent.
