Fruit was hand-harvested at night to preserve freshness and rigorously sorted before fermentation with cold soak and careful extraction. Extended maceration preceded roughly 21 months of aging in French oak barrels, 62 % of them new, allowing integration of oak and fruit without overshadowing site character.
