Aromas of baked yellow apple, toasted brioche, lemon curd, and crushed chalk lead into a rich, full-bodied palate. Flavors of dried apricot, hazelnut, and ginger mesh with an underlying layer of subtle sea salt and pastry dough. The texture is creamy and expansive from extended lees aging, kept energetic by persistent fine bubbles and crisp natural acidity on a dry finish.
Farmed using traditional, low-input methods with mechanical weed control and zero synthetic herbicides. Grapes are harvested by hand, pressed slowly, and fermented with native yeasts in stainless steel and neutral wood. The wine undergoes full malolactic fermentation before aging on its fine lees in deep, underground chalk cellars for over a decade before disgorgement, finished with a light dosage.
Grapes are sourced entirely from 100% Grand Cru Chardonnay vineyards in Epernay and Chouilly, within Champagne’s Côte des Blancs. Vines dig directly into pure, chalk-rich limestone soils that radiate stored heat during the day while maintaining cool root temperatures, preserving acid structure in long-aging Blanc de Blancs.
