Aromas of dried orange peel, rose petals, and roasted nuts integrate with complex notes of spice and a distinct earthy undertone. The palate is savory and structured, featuring a rich, vinous texture and a persistent saline finish that reflects its extensive aging.
Winemaker Olivier Deforges utilizes certified organic farming for these 60-year-old Tibouren vines. In the cellar, the grapes are fermented with native yeasts and the wine is aged for one year in 100-year-old 5,000-liter foudres. Unusually for rosé, the wine develops a thin veil of yeast, or "fleurette," during aging, which imparts a unique oxidative character and remarkable longevity.
The fruit is grown on a 15-hectare estate in the Le Pradet commune of the Côtes de Provence. This site is defined by its proximity to the Mediterranean Sea, located just 800 meters from the coast. The soil is predominantly schist and clay, which provides the Tibouren grape with its characteristic mineral depth and structural power.
