Grapes are hand-harvested and subjected to initial gentle pressing in traditional vertical basket presses. Fermentation takes place in temperature-controlled stainless steel vats to preserve purity and focus, followed by complete malolactic fermentation. The wine matures on its fine lees in the estate's subterranean limestone cellars (crayères) for over ten years before disgorgement, finished with a restrained dosage to accentuate its structural tension.
Grapes are sourced exclusively from seven historic Grand Cru villages in Champagne, France: Cramant, Avize, Oger, and Le Mesnil-sur-Oger for high-altitude minerality, balanced by Pinot Noir holdings in Mailly, Verzenay, and Aÿ for structure. The vines are rooted in deep, chalk-heavy soils that retain moisture and reflect light, defining the iconic, laser-focused minerality of the exceptional 2008 vintage.
