2018 Louis Michel & Fils Chablis
Tasting Notes ~
The Michel family has been producing wines in the region of Chablis since the early 19th century. The family vineyard, whose vines are 45 years old on average, is located in the heart of the original Chablis terroir. The Domaine’s vineyards cover all four appellations: Chablis Grand Cru, Premier Cru, Chablis and Petit Chablis. The Domaine has one guiding principle: in a terroir as rich and unique as Chablis, the wines are made in the vineyard with human intervention kept to a strict minimum. This Chablis reveals white fruit notes such as peach, and has a persistent mineral structure. In the mouth a stony sensation (which is so typical of Chablis) with a round mid body and a refreshing finish. Native yeast fermentation, minimal filtering and spending 6 to 10 months in stainless steel. This is pure Chablis!
