    Tasting Notes ~ Chasselas Doré is an old grape variety born in the Jura and Alps mountain ranges of Switzerland. Fresh, tropical and savory, it is light on its feet while having a surprising amount of structure and body. This wine is made from two rows of organically grown, ungrafted vines. The attentive vineyard practices of Eyrie demand focus on rigorous training of the vines, minimal interference with the ecosystem, and on picking at the optimal time. Insecticides, herbicides, and systemic chemicals are never used in the vineyards. In the winery, they refrain from unnecessarily manipulating the wines during their fermentation and maturation. The Eyrie Chasselas ages 6 month on lees. In spite of full natural malolactic fermentation the wine is crisp.

Small production, organic, native ferment, with a bit of skin contact and minimal SO₂ at bottling - what more could you ask for in a unique white blend that pleases all the points on your palate? A blend of of 45 percent Riesling, 40 percent Gewurztraminer, 14 percent Early Muscat, and 1 percent others that were natively co-fermented with up to 7 days of skin contact. Big Salt is light gold in color, no doubt due to skin contact during crush. Aromas of salty bergamot, lemon, nectarine and white tea– exotic fruits fill out the nose. The palate is filled with rich texture combined with green apple acidity - the finish is crisp, with hints of tannin structure that quickly cleans up.

    Robert Parker's Wine Advocate 91 ~ The 2016 Arinto, sourced from 30-year-old vines, is the latest in a brand that is one of my favorite overachievers from Chocapalha. It comes in at 12.5 percent alcohol. This is another fine one. It has excellent acidity but a bit more depth than the 2015, if not quite its laser burst of acidity. All unoaked, it is pure and fresh, with the ability to age. (Tasting the 2008 next to it proved that, by the way.) The acidity of this grape is always a preservative and it ages well in many regions. If you like them lighter in style and crispy, this is a great warm-weather choice at a bargain price.

    Tasting Notes ~ The Michel family has been producing wines in the region of Chablis since the early 19th century. The family vineyard, whose vines are 45 years old on average, is located in the heart of the original Chablis terroir. The Domaine’s vineyards cover all four appellations: Chablis Grand Cru, Premier Cru, Chablis and Petit Chablis. The Domaine has one guiding principle: in a terroir as rich and unique as Chablis, the wines are made in the vineyard with human intervention kept to a strict minimum. This Chablis reveals white fruit notes such as peach, and has a persistent mineral structure. In the mouth a stony sensation (which is so typical of Chablis) with a round mid body and a refreshing finish. Native yeast fermentation, minimal filtering and spending 6 to 10 months in stainless steel. This is pure Chablis!

These conditions reduce the vigor of the vines, resulting in more character and concentration. You'll also notice a drying touch of chalky minerality that gives linearity and focus to the wine.     Robert Parker's Wine Advocate 94 ~ Composed of 83% Sauvignon Blanc, 10% Sauvignon Gris and 7% Sémillon fermented 17% in new oak, 48% in neutral oak and 35% in concrete, the 2016 Sauvignon Blanc Mt. Veeder has quite an earthy/mineral nose to begin, featuring notes of wet pebbles, chalk dust and damp moss over a core of ripe peaches, lemon curd and dried herbs. The medium to full-bodied palate has great vivacity and depth, sporting a beautifully chewy phenolic texture and rasping backbone of acidity to support the intense citrus and herbal flavors, finishing on a lingering chalky note. Still very youthful, forget it for a year or two and drink it over the next 10-12 years+.
