    Tasting Notes ~ Just in time for Spring! Pinot Noir Pet-Nat. Crafted using the ancestral method, the wine is bottled before primary fermentation is finished — without the addition of secondary yeasts or sugars. The wine completes the fermentation process in the bottle, capturing Co2 and resulting in a lively, rustic, terroir-driven sparkling wine. Nectarine, lemon peel, and white roses. Limited release.

    Robert Parker's Wine Advocate 93 ~ “The 2009 Brut Vintage blends 60 percent Pinot Noir and 40 percent Chardonnay from 20 grand and premier cru villages in the Montagne de Reims and the Côte des Blancs. Fermented in stainless steel with each variety and each village kept separate and malolactic completed, the 2009 aged eight years in the cellars before being hand-riddled and disgorged. Disgorged in October 2017 and tasted in June 2018, the 2009 shows an intense, concentrated, pretty vinous and profound bouquet of ripe fruit, chalk, brioche and nutty/almond notes. Full-bodied and rich but fresh and even refined on the palate, this is a very elegant, round, charming yet well-structured and vinous Vintage Brut with a clear, fresh, structured and remarkably persistent finish. It drinks already very well today, but its aging potential is most probably stunning.”

  • NV Saltare Méthode Cap Classique Brut Nature

    Tasting Notes ~ Saltare spends a minimum of 18 months on the lees, with no added sugar or sulphur when it is disgorged. The dates of bottling and disgorgement are printed on each label.  The wine has aromas of sliced grapefruit and white flowers that introduce the freshness of the wine, accompanied by brioche and biscuity notes. There are fresh lemon, strawberry, gooseberry, lime zest and honey-cake on the palate, with a delicate texture of oyster shells that reflects the chalky origins of the vines. The fine and consistent mousse leads to a complex, refreshing finish. Since no dosage is added when the wine is disgorged, it is a naturally dry and zesty sparkling wine. The Brut Nature is comprised of 50-60% Chardonnay and 40-50% Pinot Noir.  Less then 400 cases produced.

    Tasting Notes ~ From two families of wine growers, Anne and Philippe Gimonnet have chosen the same path as their ancestors. In 1986 the first bottles of Champagne Gimonnet-Gonet were vinified. Since then, Anne and Philippe have had only one goal: to create champagnes of excellence. This Grand Cru Champagne is comprised of a a blend of 90% Chardonnay and 10% Pinot Noir (both harvested from their 13 acre Estate). The wine spends two years on the lees before disgorgement with 7grams at dosage. This is Growers Champagne at it’s best.

A blend of 55 percent Xarello, 25 percent Macabeo and 20 percent Parellada, from vines planted in 1995, this crisp, delicious, dry sparkler spent 12 months on its lees. Attractive notes of honeyed brioche, poached pear and caramelized grapefruit jump from the glass of this zesty, light-bodied, exceptionally well-crafted, pure, fresh cava. Only 5,000 cases produced.

    Robert Parker's Wine Advocate 97 ~ Created in 1988 as a tribute to one of the house’s founders, Elisabeth Salmon, Billecart-Salmon's iconic 2007 Millésime Brut Rosé Cuvée Elisabeth displays a beautifully radiant, shimmering orange-salmon color. The bouquet of this Pinot Noir/Chardonnay blend is as intense as it is delicate and vinous, displaying red and yellow-fleshed fruit intertwined with floral, chalky and citrus notes as well as a noble sur lie character. Round, lush and delicate on the palate, this is a highly elegant, charming, beautifully balanced rosé with great finesse and amazingly fine grip on the long yet pure, tensioned, well-structured and stimulatingly salty finish. This rosé Champagne is close to perfection! A small percentage of the Pinot Noir—from old vines in the south-facing Valofroy parcel in Mareuil-sur-Aÿ—was vinified as red wine and added to give this unique color and vinosity. The other Pinots are sourced in the grand crus Verzenay and Aÿ, and the Chardonnay comes from grand crus in the Côte des Blancs, namely Chouilly, Avize and Mesnil-sur-Oger.
